Autumn
Pumpkin and Walnut Loaf
This is the perfect bread for savoury or sweet toppings/fillings, depending on your mood! I sometimes team it up with hummus or cheese or, if I am in a sweet mood I use jam or peanut butter.
Spicy Pumpkin Loaf
This loaf is perfect when the pumpkins start to appear in late autumn.
Apple and Raisin Muffins
I love these muffins freshly baked. I often make them when I have apples that are turning slightly soft (past their best).
Pear and Ginger Muffins
Pears are a very good source of water-soluble fibre. They contain vitamins A, B1, B2, C, E, folic acid and niacin.
Spicy Carrot and Raisin Muffins
These are lovely and I particularly like the spicy undertone from the nutmeg, ginger, cloves and cinnamon. These muffins are packed with fibre, antioxidants, iron and more.
Apple and Bran Muffins
Ever since I was little, growing up in Iceland I dreamt of keeping an apple tree. I love apples and my father always used to slice an apple each night when watching his TV programs.
American Blueberry and Walnut Muffins
Blueberries are so called "super foods" as they contain a lot of antioxidants. They also contain iron and vitamin C and are therefore very good for you if you are anaemic.
Pineapple and Carrot Muffins
These muffins are perfect for summer and healthy as well. The pineapples are very good for your stomach, containing bromelain, an enzyme that breaks down proteins.
Blueberry and Pecan Muffins
Blueberries and pecans are a match made in heaven (or any other nice place). They are totally meant to be together, especially in muffins.
Rhubarb and Date Compote
Rhubarb is an excellant plant. It may benefit those with high cholesterol and it also provides a good source of vitamin C, fibre, potassium and calcium.
