Potato Chips

These potato chips have absolutely no fat and are still delicious and crispy. Ok they might not be as juicy as your traditional potato chips but if you want a healthy alternative this is the one. I often make this as a snack or a side dish with salads or grilled vegetables.


A very healthy and delicious version of potato chips with no added fat

This recipe is:

  • Lactose (dairy) free
  • Nut free
  • Vegan

Potato Chips

Serves 2 people as a side dish or snack

Ingredients

  • 2 large potatoes, sliced very thinly
  • 1 teaspoon salt (Himalaya or sea salt)

Preparation

  1. Wash the 2 potatoes.
  2. With a very sharp knife, slice the potatoes very, very thinly (as thinly as possible, aim for 1 millimeter/0.04 inches). You can also use a mandolin slicer.
  3. Place baking parchment on a large baking tray.
  4. Arrange the slices in one layer on the baking parchment.
  5. Sprinkle the 1 teaspoon salt over the slices.
  6. Bake at 80 degrees Celsius/176 Fahrenheit/Less than Gas Mark 1/4, for 60 minutes.
  7. Turn the heat up to 100 degrees Celsius/212 Fahrenheit/Slightly less than Gas Mark 1/4, for a further 30 minutes.
  8. Serve immediately as they will soften up fairly quickly.

Tips

  • You can use any spices and herbs you favour such as garlic, thyme, rosemary, pepper and more.
  • You can also use potato peel and prepare in the same way.
