Melon and Yoghurt Smoothie

I love the cooling effect of this drink and I often serve it after a spicy meal. It is almost like a light dessert in a glass as well since it is on the sweet side so is perfect when you are serving a filling meal in summer. If you prefer the drink less sweet you can use less of the orange juice.
You will need a blender or a food processor to make this smoothie.

Melon and Yoghurt Smoothie
Serves 2 people
Ingredients
- 100 millilitres (3½ fluid oz) soy yoghurt (or regular yoghurt)
- 100 millilitres (3½ fluid oz) orange juice
- 1 large banana, very ripe
- Half a cantaloupe melon
- A couple of ice cubes
Preparation
- Slice open the cantaloupe (you will only need half a cantaloupe for this recipe). Clean out the seeds and membrane. Cut the cantaloupe in slices and cut off the tough outer skin.
- Place the ice cubes in a blender or food processor.
- Pour 50 millilitres of the orange juice on top of the ice cubes.
- Blend for 5 seconds.
- Peel the banana and add to the blender along with the cantaloupe, 100 millilitres soy yoghurt and the remaining 50 millilitres orange juice.
- Blend for 30 seconds or until smooth.
- Serve immediately.
Tips
- You can use pineapple juice or apple juice instead of the orange juice.
- You can use a honey dew instead of the cantaloupe.
