Date Jam

I use this jam for everything...as a layer when making cakes, on my toast, with hummus, on oatmeal biscuits, in my yoghurt and on waffles. It just goes with everything and is so easy to make. If you use sterilised jars you can keep the jam in the fridge for several weeks.

A very simple yet delicious jam for every occasion

Date Jam

Makes 300 grams jam

Ingredients

  • 100 grams (3½ oz) pitted dates, chopped coarsely
  • 250 millilitres (8½ fluid oz) apple juice (or orange juice)
  • 1 teaspoon vanilla extract (from a health food store)
  • ¼ teaspoon ground cinnamon

Preparation

  1. Chop the 100 grams dates coarsely and transfer to a large saucepan.
  2. Add the 1 teaspoon vanilla extract, 250 millilitres apple juice and ¼ teaspoon ground cinnamon.
  3. Bring to a boil and let simmer for 20 minutes.
  4. Pour boiling hot jam into sterilised jars (boil the jar and lid in a saucepan for 10 minutes).

Tips

  • You can use orange juice instead of the apple juice.
  • If the jars are sterilised, the jam will keep for several weeks in the fridge.
  • You can freeze the jam as well, it keeps in the freezer for several months. Freeze in plastic containers.
  • This is an excellent jam for waffles, on toast, as layer for cakes, in smoothies and more.
