Blueberry Tea

This is my favourite tea when blueberries are in season although I often make it with frozen blueberries as well. Blueberries have in recent years been hailed as a type of "super food" and no wonder as they are packed with vitamins E and C, fibre, iron and antioxidants which can help fight against certain types of cancer and is very good for our heart as well. Not only can blueberries lower your risk of heart disease and cancer, they are also anti-inflammatory. Blueberries, along with other berries such as raspberries and blackberries, have more ellagic acid than any other fruits. Studies have indicated that people who eat fruits high in ellagic acid are significantly less likely to develop cancer than people who do not consume this important acid through their diets. This is the reason I have a smile on my face whenever I am sipping my blueberry tea, how can you not?

Blueberry Tea

Serves 2 people

Ingredients

  • 600 millilitres (20 fluid oz)  water
  • 2 heaped tablespoons blueberries (fresh or frozen). You can also use 2 tablespoons organic blueberry jam
  • 2 teaspoons agave nectar
  • 2 teaspoons lemon juice

Preparation

  1. Place the 2 tablespoons blueberries in a small saucepan.
  2. Add the 2 teaspoons agave nectar and 2 teaspoons lemon juice.
  3. Bring to a boil and allow to simmer for 5 minutes.
  4. Crush the blueberries slightly with a spoon.
  5. Add the 600 millilitres water and allow to simmer for 5 minutes.
  6. Pour the tea through a sieve and into a container (preferably one that can keep the tea warm).
  7. Pour the tea into cups and enjoy.
  8. Add agave nectar to taste.

Tips

  • You can also use acacia honey instead of the agave nectar.
  • You can make all sorts of teas from berries. Why not try blackberries, raspberries and strawberries.
  • The tea is also very good chilled. Chill in the fridge and add a little more of the agave nectar to taste. Stir well and serve with ice cubes.
